Bibo! It’s the new pilsner from the Creature Comfort brewery of Athens, Georgia. It’s a beer I think my grandfather would have loved, because, well, he loved beer, especially good beer. I think he would have liked the name, too, because it’s so close to Bevo, which was his pet name for any animal the name of which he did not know. They instantly became Bevo. I think he got the name from Anheuser-Busch’s Bevo near beer from Prohibition, though Bevo has also been the name of the mascot of the University of Texas Austin, and has been for a century.
Anyway, Bibo Pilsner is a tasty little beer that he would have liked, and I know I like. I ordered up a mug while watching the New England Patriots (my grandfather liked them, too) at my local Taco Mac one fine Sunday afternoon.

Bibo® was named after Albert Einstein’s parrot, which he received as a gift for his 75th birthday. Bibo also means “I drink” in Latin.
Creature Comforts Bibo Pilsner is (mostly) a classic rendition of a Czech pils. It is brewed with classic Saaz hops, Sterlings (much like Saaz) and Moteuka which are citrusy and impart notes of tropical fruit. The beer has an alcohol content of 4.9% by volume. I paid $6.25 for a 23-ounce mug at Taco Mac and I’ve seen it as low as $9.49 a six-pack in cans at Target.
My mug of Creature Comforts Bibo Pilsner arrived a beautiful golden color with a thick fluffy white head and a wonderful earthy hop aroma. Taking a sip, the beer has a delightful crisp biscuit malt base with grassy herbal Saaz hop aroma and flavor and a long dry bitterness. A hint of tropical notes from the Moteuka hops pokes through too, which I could do without in a pils. But hey, that’s the Creature Comforts signature here, and it really does work without distracting from the overall impression of a classic European pilsner.
This is very good, and I’ll be back for more in cans of this year-round treat.
